Whoever invented cake box mix cookies is a genius. This cookies are not only so easy and quick to make, they also taste so good! We use a strawberry cake mix for this strawberry milkshake cookies. Its easy, its fast and your kids can help you do all the prep work!

Recipe ingredients

For this strawberry milkshake cookies recipe you will only need 5 simple ingredients. Lets start:

  • Strawberry box milk. This is an essential ingredient and used instead of flour, sugar, food coloring and strawberries.
  • Baking powder. Helps cookies rise while baking.
  • Eggs. Eggs will hold cookies together and will not let them spread out too much on the cookies sheet.
  • Oil. I used olive oil but any vegetable oil will work. Avocado oil, olive oil, canola oil, you name it.
  • Chocolate chips. To create this milkshake look on the cookies i added white chocolate chips. If you don’t like white chocolate chips you can definitely use another kind of chocolate chips like milk or dark chocolate. Or substitute them all together to chopped walnuts, chopped almonds or pecans. Or Macadamia nuts will perfect since they are the same color!

How to make strawberry milkshake cookies

The step by step instructions are very easy to follow. You will only need a handful of ingredients, like eggs, oil, baking powder and of the strawberry cake mix. I like how strawberries taste with white chocolate so i added white chocolate chips to the dough, and a few for decoration.

In a medium size bowl you will need to add two eggs and oil and stir them together until smooth. Than add your strawberry cake mix and baking powder. Stir but don’t overmix!

Last add white chocolate chips. Don’t stir them around too much, just fold them in to the batter. Line cookie sheet with parchment paper and scoop cookie dough on it. You will have about 24 cookies form this amount of dough.

Bake in preheated oven for approximately 10 minutes. Cookies need to be still soft, they will firm up once out of the oven. Don’t overcook or instead of chewy cookies you will get hard crunchy cookies. Unless you actually prefer crunchy cookies.

If your kids like to bake or help you baking, this is a perfect recipe for them. Not to hard for a beginner as well. That’s the reason i love to bake cake mix cookies so much because its so easy!

Expert tips

  1. I don’t recommend using chopped fresh strawberries in the dough. They contain too much moister and cookies will end up being under cooked.
  2. Store leftovers on the counter for couple weeks. Do not put cookies in the fridge, they will get soggy.
  3. Don’t overmix the dough.
  4. If you don’t like white chocolate chips you can use any of your favorite like dark chocolate chips, milk chocolate chips, chopped walnuts or chopped pecans.
  5. If you have freeze dried strawberries you can absolutely use them! They will add more red color to the batter and will make strawberry milkshake cookies even more delicious.
  6. Enjoy cookies with a hot cup of black tea, coffee or a glass of cold milk! Milk is my kids favorite option because you can dunk cookies in and eat it that way.

Ingredients

  • 1 box strawberry cake mix
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/3 cup oil
  • 1 cup white chocolate chips

Instructions

  • Preheat oven to 350 degrees. Line cookie sheet with parchment paper or foil.
  • Mix all the ingredients from the list. Fold in chocolate chips in the end
  • Using a tablespoon or a special cookie scooper, drop cookie dough ball on to the cookie sheet. Bake for 10 minutes.
  • Let cool and enjoy!

What a difference 1 teaspoon of baking powder makes! I can’t imagine making cake mix cookies without ever again. Brilliant!
