This lovely Easter themed cookies are so easy to make! With only a few ingredients you will make this yummy carrot cake cookies in less then 20 minutes.

This cookies are not only for Easter. Bunny loves carrots, so do we! When i have a carrot cake box mix on hand, cookies are our most popular option to bake. Who doesn’t like cookies?

Carrot cookies 101

This recipe is perfect for lazy day baking.Cake mixes safe me when i have no time to cook or simply if i don’t have enough ingredients at home. So today i am going to show you how to make two types of cake mix cookies- carrot crinkle cookies and nest candy cookies (Easter edition).

Carrot crinkle cookies. You will need to start with mixing all the ingredients. Make sure that eggs are fresh. Prepare a little bowl and fill it with powdered sugar . Using your hands create little balls out of the dough and roll them in the sugar. Roll them well, make sure they covered in it all over!

When you will be baking them, cookies will spread out and powdered sugar will create a crinkle effect. Let them cool before eating/ Cookies will be very soft so let them harden a bit.

Easter candy cookies. This recipe is a bit more creative and requires some round shaped candies to create a “nest”. Make the dough the same way and scoop it to the cookie sheet using a tablespoon or a cookie scooper.

Bake for about 10 minutes and pull out. Here is a little trick. While cookies are still hot, push them with a back of the spoon in a middle to create a nest. Than wait until cookies are cold and fill that dip with candies . I used soft colored Easter candies.

Another way to make a nest is to push raw cookie dough balls with a tiny glass. This way is not preferable since cookies will spread out during baking and the nest will lose its shape.

As you can see, making cookies from a cake mix as so easy. Let your child help you baking or mixing the dough. Let them help you roll dough balls and dip them in the powdered sugar! Let them fill cookies with candies! Baking is so much fun and bring family together. We love it, hope you will it too.

Ingredients

  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 box cake mix

For carrot crinckle cookies

  • 1/3 cup powdered sugar

For "bird nest" cookies

  • 1/2 cup little round candies

Instructions

  • Preheat oven to 350 degrees. Mix all the main ingredients in a large bowl.
  • For crinkle cookies: Scoop about 1 tablespoon of dough and roll a ball. Roll it in the powdered sugar and place on the cookie sheet. Cook for about 10 minutes and let cool completely.
  • For nest cookies: Scoop the dough with a tablespoon onto the cookies sheet, couple inches apart. Bake for 10 minutes and pull the cookie sheet out. While cookies are hot, make i little dip in a middle of each cookie using the back of the spoon or a tiny glass bottom. Let cool and fill them with your favorite round tiny candy.

Notes

Make sure to let cookies to cool completely before filling them with candy. Otherwise candy will melt.
Use a small plate for your powder sugar, that will help rolling.
Weight watchers points are calculated for cookies only. If using powdered sugar or round candies, add points accordingly:
