What is shad roe
Shad roe is egg sac of an American saltwater fish called shad. The season is pretty short, a few weeks, but if you are lucky you can find it from February to May. Depends where you live.
Shad belongs to herring family and has lots of bones and oily. I don’t recommend eating fish without proper attention. Its very easy too choke on a bone.
The roe is very bright in color. It is usually red or has a beautiful orange color. When you cook it, roe changes its color to brown or grey.
Where can i get it
If you live along the cost you will be able to find shad roe in the seafood markets, when in season. I ordered mine online form New York fish store. It came very fresh and never frozen.
Prefect choice for those who can’t find it in stores nearby.
How to cook shad roe
For this shad roe scrambled eggs recipe you will need to scrape roe off the sac. Be gentle while doing it. Roe is very tender and delicate.

Just cut sac open form one side and slowly scrape fish eggs, without ripping other parts.
Once done, mix it with eggs in a bowl and add seasoning. Heat butter in a small skillet and add the egg mixture in it. Cook just like you would cook scrambled eggs.
Also you can make scallion oil. Cook chopped scallions in butter first and then add eggs mixture. It will add more flavor.
Add chopped green onions on top too, it will add a crunch to your dish.
Enjoy scrambled eggs with a piece of toast or sliced cucumbers on the side. Don’t forget to squeeze some lemon over the eggs, it will help to open the flavor of the shad roe.

Can i use another roe in this recipe?
Shad roe is very very delicate and doesn’t taste like any other roe or caviar. You can totally use another fish roe but it definitely not taste the same. I tried to make scrambled eggs with salmon roe before. It tasted great! But different.

Shad roe scrambled eggs
Ingredients
- 2 eggs
- 1 teaspoon milk
- 1 sac of shad roe
- 1 teaspoon butter
- 1/2 lemon
- salt and pepper
- green onions chopped
Instructions
- Scrape shad roe into the bowl.
- Mix eggs, salt, pepper and milk in a different bowl. Add roe and mix again.
- Melt butter in a medium size skillet. Cook the mixture just like you would be cooking scrambled eggs.
- Add some lemon juice to finished dish and serve with chopped green onions on top.
