I just love butternut squash! Its sweet, its delicate, and i cook it pretty often. Try my another recipe too,  Instant pot mashed butternut squash with warm fall spices. Delicious!

But this time i am excited to show you how i made a creamy Instant Pot soup with butternut squash! It was so delicious and full of fall flavors, my entire family loved it!

This soup is deliciously sweeten with fresh hand picked apples from our local u-pick farm. Every summer and fall season i drive just about 30 minutes into the valley to have a chance to pick our own vitamins packed fruit. What an experience! Kids love to run around orchard trees, play games and pick fresh apples.

This soup will work with any variety of apples you will pick. I used Fuji, becouse of its sweet flavor, also try Gala, pink lady, McIntosh! Didnt make it with granny sweet and other sour apples but i am sure it will work just as well.

How to make pressure cooker butternut squash soup step by step instructions

Butternut squash is the king (queen?) of this creamy soup. Pick a medium size squash so it will easily fit into your Instant Pot instant pot butternut squash soup

Peel and cut it in to big chunks. Dont forget to add onion and apple! They will add more flavor and sweetness.

If you like pumpkin pies, then dont forget to add some pumpkin pie spice. It will bring more fall flavor to your soup

Add broth and cook for 8 minutes under high pressure. You can use hand blender to puree your soup, but i used my Vitamix. I have to mention that any blender will work because ingredients will be very soft and easy to blend.

How to garnish butternut squash soup

Serving toppings are absolutely up to you. I like to use chopped cooked bacon bites and just a drop of sour cream or heavy cream on op. Pepitas ( Pumpkin seeds) will work fantastic too, and so pretty!

Add coconut cream or even Greek yogurt on top!  Bacon adds an extra crunch that is so needed here, but crunchy pumpkin seeds will make the trick.

I added a slice of fresh fig on top just because i love figs and they look so pretty! Figs were in season and they are delicious and very nutritious.

Thanksgiving is just around the corner and this butternut squash soup will be a great addition to your family table. Creamy delicious soup puree will pair well with cornbread or biscuits. You can deep them in to the soup.

The best way to enjoy your butternut squash soup is with crunchy grilled cheese sandwich on a cold winter or fall day. Its not getting really cold here in North Cali until January so i am making this soup

How to blend butternut soup

To get the best results, use immersion blender or like others call it, hand blender to puree the soup. You will end up with the creamy nice consistency soup. If you will decide to pour it into the stand blender or food processor, results may very, the soup can become a bit grainy and not that creamy.

How to store pressure cooker butternut squash soup

You can keep the soup in the fridge for up to 4 days. I didn’t try to freeze it yet, but i think the air tight container will help it stay fresh for up to 3 months in the freezer. Let it defrost in the fridge overnight before reheating. I recommend to add the cream (if using) after the soup is hot, to create the pretty pattern.

Equipment

  • Pressure cooker

Ingredients
  

  • 1 medium butternut squash
  • 4 cups Vegetable broth
  • 1 apple
  • 1 onion
  • 1 tbspn pumpkin pie spice (optional)
  • salt to taste
  • freshly ground pepper to taste

Instructions
 

  • Wash and peel medium size butternut squash. Cut in cubes and place in to your Instant Pot.
  • Add cubed apple and roughly chopped onion. Add pumpkin spice on top and chicken broth.
  • Close and lock the lid and set timer to 8 minute on high pressure. Quick release.
  • Use hand blender or just regular blender or food processor to puree it.  The soup will be pretty thick.
  • Add salt and pepper to taste.

Notes

Garnish with chopped cooked crispy bacon bites , drop of sour cream or heavy cream.
You can substitute chicken broth to vegetable broth or even water.

Followed recipe but added 2 cloves garlic. Used pepitas & browned finely chopped ham on top. Everyone loved it. Next time I'll add an extra apple. Very easy & tasty.

Vegetable or chicken broth? In one place you mention veg and in another chicken. Which broth worked best for you?

Hi! I like when its made with a chicken broth, but choose vegetarian broth if you are vegetarian or vegan

Just made this soup tonight and it was so good. I had frozen squash in the freezer which worked really well. Nexr time I will add an extra apple. Definitely will make this again.
