Fall of the bone tender, quick and easy instant pot oxtail recipe. Warming and comforting dish that will be so good for a weekend dinner!
Oxtails are just a delicious very comforting dinner that i am trying to cook at least once a month. The house smells great, the meat is so tender is falls of the bone!
Where to buy oxtails?
Oxtails are usually sold in big grocery stores like Costco. Thats exactly where i bought this package. The price varied from 5 to 6 or even 7 dollars per pound.
How to make this recipe step by step
If your oxtails are frozen make sure to defrost them by leaving in the fridge overnight or just by running cold water over the package for few minutes. Open the package and wash the meat under the stream of cold water or in the bowl full of cold water. Rinse it well.
I know in some cultures they soak the meat in the water with a bit of vinegar for a while but we are not going to do that. At least in Russia we don’t used to do that. Once your oxtails are nice and clean, dry them with the paper towel. Make sure there is no water left, its very important for the next step.
Add some vegetable oil into the inner pot of your instant pot. Turn on SAUTE button and brown oxtails on both sides, about 5 minutes total. If you will leave any water on the meat it will result in splashing oil.
Once oxtails are nice and brown, add chopped onion. Let it cook for a minute or two but that’s not required. Onion in this recipe is for flavor only and not for texture, it will dissolve during the cooking process. For the same reason you can easily add carrots or celery. They will not hold shape but will make the broth more flavorful.
Now its time to close and lock the lid. Set the Manual pressure to 1 hour. Let Instant pot to naturally release the pressure once cooked. Serve over rice or with mashed potatoes, like i did! Pour couple spoons of broth on top and enjoy!

Instant pot oxtails
Ingredients
- 2,5 lb oxtails clean and pat dry
- 1/2 onion
- 1 tablespoon salt
- 2 teaspoon black pepper
- 1 tablespoon paprika
- 1 tablespoon vegetable oil
- 1 cup water or broth
Instructions
- Add oil to the pot. Turn on SAUTE mode. once hot, add oxtail and brown on both sides, about 5 minutes ( make sure they are completely dry before adding to prevent oil splashing!)
- Add chopped onion, water and spices and close and lock the lid. Set the pressure cooker to 1 hour Manual setting High pressure. Once cooked, let release naturally for 10-15 minutes.
- Serve oxtails with your favorite side dish, pasta, potatoes or rice!

Hi, you don’t mention in the directions of your recipe to add the spices or water. I am assuming you do that before you seal the pot?
