I have to admit this is not your average sweet cookie , you really can tell it’s pretty healthy when you will take your first bite. But we love it healthy here, so my whole family is enjoying it.

Ingredients

Bananas. Adds natural sweetness, moisture, and binding power to the cookies without any refined sugar.

Peanut Butter.Provides creaminess, a slight savory contrast to the sweet banana, and healthy fats for a satisfying snack.

Oats.Adds a chewy texture and fiber, making these cookies more filling and heart-healthy.

Peanut butter oatmeal banana cookies step by step

Preheat oven to 375°F and line a cookie sheet with parchment paper. Lightly spray with coconut oil to prevent sticking.

In a medium bowl, mash the bananas until smooth. Add peanut butter and oats to the mashed bananas and mix until well combined.

Spoon the cookie dough onto the prepared baking sheet, forming cookie-sized mounds. Bake for 15-20 minutes, or until edges turn golden brown.

Remove from oven and let cookies cool completely before enjoying with milk or tea.

Storage and leftovers

Store leftover cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. You can also freeze them for up to 3 months; just thaw them overnight in the fridge.
