- 2-3 lb pork butt roast
- 2 tspn garlic powder
- 2 tbsp salt
- 2 tbsp paprika
- 1 tbsp ground pepper
- 1 can stewed tomatoes (12-15 oz) or diced tomates
- 12-15 oz corn( canned or fresh)
- 12-15 oz refried beans
- 1/2 cup shredded mexican cheese blend or shredded cheddar
- chopped green onions for garnish
Combine all the dry spices and rub your pork roast with it.
Place pork roast in to your crock pot , add a can of stewed tomatoes, close lid and cook for 4 hours on high or 7 hours on low.
When pork is done, shred it using 2 forks right in your slow cooker, mixing with the juices
Transfer pulled pork to the large skillet, add refried beans and corn, mix very well and cook on medium for 1 min, stirring.
Add cheese, mix and turn the stove off.
You can leave the dish right in the skillet , garnish with some chopped green onions and more cheese, or transfer it to the deep bowl for easy dipping. Enjoy!
I made a few adjustments to this recipe. I had leftover pulled pork from an event, so I used that. The only problem with that was my pork had a smoky flavor that dominated the dip. To counteract that, after tasting the finished product, I added jalapeños to give some spice. I made the dip in the morning then took it to work in a small crockpot on warm for a work party. Everyone loved it!
Thank you very much for your kind words! Glad you liked it!
I hate beans on their own so mixed with something might be the way to go for me. Might try this recipe – looks rich and yum!
Thank you! Beans here are worth trying)

This sounds delicious. I have another recipe with pork butt roast, salt and smoke flavor. Only those 3 ingredients and so far it’s the best pork I’ve ever had. I’ll have to try your recipe though. 🙂
You right, pork doesn’t need any fancy ingredient to be delicious . Salt, pepper and love:)
I want to eat this by the spoonful, on toast… on everything!! It looks awesome! Delicious 🙂
Good idea on a toast!
Look at all these photos! They are enough to make my mouth water!! definitely going to try this out over th weekend.
One question though – how do get time to prepare these sumptuous dishes with kids in th house? 😉
Thanks a lot for your kind words! Well, as long as my toddlers are fed, they seems to be ok( honestly-nap time is the only time:)
