Instant pot turkey congee – also known as jook – is a convenient and delicious spin on a classic Chinese recipe. Because while the traditional stovetop method to make rice porridge can take up to 2 hours or more, this great pressure cooker recipe is ready in less than an hour from start to finish!

The foundation of any Asian-style savory porridge is easy to make with basic white rice, and either water or broth. In this recipe we also include fragrant ginger, soy sauce and fish sauce for extra umami-ness, and tender shredded cooked turkey.

Together these simple ingredients make a one-pot dish that is hearty and flavorful… It’s a real “stick to your ribs”-type meal! Recipe ingredients

Rice. Jasmine or short grain white rice have the best soft yet tender consistency when cooked in the Instant Pot.

Water. Use chicken broth for more deep savory flavor.

Turkey. Using shredded cooked turkey leftovers makes this recipe super fast and easy. But you can certainly start with uncooked meat! Keep reading for notes on how to make Instant Pot congee with raw turkey.

Ginger and garlic. These sharp, pungent and delicious aromatics make the dish spice-ful (not spicy!) and earthy. They are great to balance the savoriness of the other ingredients.

Soy sauce. Use your choice of regular, low sodium soy sauce, or even coconut aminos if you prefer. Any of these options will add a nice umami flavor to the congee.

Fish sauce. The saltiness and strong fermented caramel taste of fish sauce also kicks the umami-ness up a few levels. But it is optional, so feel free to omit this ingredient from the recipe if you want.

Salt and pepper. A pinch of each of these staple spices helps to enhance all of the other flavors.

What to serve with turkey congee

Garnishes. Serve with classic toppings like sliced fresh green onions, chopped fresh cilantro, and/or crispy fried shallots. I suggest having these out in individual bowls and letting everyone add their own garnishes!

Eggs. Nestle a halved soft boiled egg – or my favorite, century egg! – in your bowl of turkey congee for an extra boost of protein and flavor. Century eggs are amazing in congee as well!

Chili oil. Drizzle on some fiery Chinese chili oil sauce for a kick of spiciness.

Frequently asked questions

What is the difference between jook and congee?

Jook and congee are just different names for the same savory rice porridge dish. The name “jook” is specifically a Cantonese word for congee.

Is congee just overcooked rice?

Basically, yes. The Instant Pot overcooks the rice in a good amount of liquid, which then activates the starchiness and thickens the turkey congee.

How smooth should congee be?

Jook should be quite smooth, but with a bit of texture from the rice… Somewhere between the consistency of a creamy risotto and thin gruel.

Is it ok to reheat congee?

Definitely! The consistency is best freshly prepared, in my opinion, but congee will keep and reheat well. But note that the texture of the jook will get softer and smoother after reheating.

How do I make this recipe with raw turkey?

Start with raw turkey to make pressure cooker congee, if you prefer! Just saute the uncooked meat in the Instant Pot along with a bit of your favorite high-heat cooking oil, like canola or avocado oil.

Once cooked, remove the turkey from the pot and set aside on a plate. Then prepare the IP recipe per the steps outlined below.

How to store leftovers

Store leftover turkey congee in the air tight container for up to 6 days. Use can also freeze it for up to 3 months. Defrost overnight in the fridge and reheat in the pot until hot and steamy.

Ingredients

  • 1 cup jasmine rice or any short-grain rice
  • 6 cups water or chicken broth or a mix
  • 2 cups cooked turkey shredded leftover turkey works great
  • 1- inch ginger sliced
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce optional for extra umami
  • Salt to taste

Instructions

  • Rinse the rice under cold water.
  • Add rice, broth, ginger, garlic, soy sauce, and fish sauce to the Instant Pot. Stir to combine.
  • Set the Instant Pot to Manual (High Pressure) for 20 minutes. Let the pressure naturally release for 10-15 minutes, then release any remaining pressure.
  • Stir in the shredded turkey. Adjust thickness with more broth if needed. Season with salt.
  • Serve with green onions, cilantro, and white pepper. I like to add century eggs as well!
