This Instant Pot turkey congee recipe makes the most cozy, delicious, and satisfying rice porridge in under 1 hour. Enjoy warm congee (AKA jook) for a savory breakfast, lunch, or dinner that is both nourishing and deeply flavorful!
2cupscooked turkey shreddedleftover turkey works great
1-inchginger sliced
2clovesgarlic minced
1tbspsoy sauce
1tbspfish sauce optionalfor extra umami
Salt to taste
Green onions choppedfor garnish
Cilantro choppedfor garnish
Fried shallots optionalfor garnish
White pepper to taste
Instructions
Rinse the rice under cold water.
Add rice, broth, ginger, garlic, soy sauce, and fish sauce to the Instant Pot. Stir to combine.
Set the Instant Pot to Manual (High Pressure) for 20 minutes. Let the pressure naturally release for 10-15 minutes, then release any remaining pressure.
Stir in the shredded turkey. Adjust thickness with more broth if needed. Season with salt.
Serve with green onions, cilantro, and white pepper. I like to add century eggs as well!
Notes
You can use raw turkey as well. Just sauté it in the Instant Pot first before adding the rice and broth, then follow the same steps.
Adjust the consistency of the congee by adding more or less broth depending on your preference.
