Ingredients

  • 1 cup jasmine rice or any short-grain rice
  • 6 cups water or chicken broth or a mix
  • 2 cups cooked turkey shredded leftover turkey works great
  • 1- inch ginger sliced
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce optional for extra umami
  • Salt to taste
  • Green onions chopped for garnish
  • Cilantro chopped for garnish
  • Fried shallots optional for garnish
  • White pepper to taste

Instructions

  • Rinse the rice under cold water.
  • Add rice, broth, ginger, garlic, soy sauce, and fish sauce to the Instant Pot. Stir to combine.
  • Set the Instant Pot to Manual (High Pressure) for 20 minutes. Let the pressure naturally release for 10-15 minutes, then release any remaining pressure.
  • Stir in the shredded turkey. Adjust thickness with more broth if needed. Season with salt.
  • Serve with green onions, cilantro, and white pepper. I like to add century eggs as well!

Notes

  • You can use raw turkey as well. Just sauté it in the Instant Pot first before adding the rice and broth, then follow the same steps.
  • Adjust the consistency of the congee by adding more or less broth depending on your preference.
