Instant pot turkey congee

- 1 cup jasmine rice or any short-grain rice
- 6 cups water or chicken broth or a mix
- 2 cups cooked turkey shredded leftover turkey works great
- 1- inch ginger sliced
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp fish sauce optional for extra umami
- Salt to taste
- Green onions chopped for garnish
- Cilantro chopped for garnish
- Fried shallots optional for garnish
- White pepper to taste
Rinse the rice under cold water.
Add rice, broth, ginger, garlic, soy sauce, and fish sauce to the Instant Pot. Stir to combine.
Set the Instant Pot to Manual (High Pressure) for 20 minutes. Let the pressure naturally release for 10-15 minutes, then release any remaining pressure.
Stir in the shredded turkey. Adjust thickness with more broth if needed. Season with salt.
Serve with green onions, cilantro, and white pepper. I like to add century eggs as well!
- You can use raw turkey as well. Just sauté it in the Instant Pot first before adding the rice and broth, then follow the same steps.
- Adjust the consistency of the congee by adding more or less broth depending on your preference.
