Easy recipe for old fashioned coconut custard pie with just 4 ingredients! Delicious dessert to treat your guests.
Its getting colder around here in Northern California and i am trying to bake a pie each week. When it comes down to the texture, this coconut pie is not smooth like other pies i tried before. Its chewy and has a crunchy sugary coconut top.

How to make coconut custard pie
For this recipe i used a premade pie crust that i kept in the freezer. Let the crust thaw and now its time to make a filling. The filling has only 4 ingredients: eggs, sugar, melted butter and coconut. Make sure that the coconut is flaked.
Mix all the ingredients in a medium size bowl until smooth and pour into your prepared pie shell. Place the raw into the preheated to 350 degrees oven and bake for about 1 hour. I usually cover pie edges with pieces of foil to prevent them from burning.

Equipment
- Ceramic pie dish
Ingredients
- 3 eggs
- 1 cup sugar
- 1/2 cup butter melted
- 1 cup flaked coconut
- 1 unbaked pie shell
Instructions
- Preheat oven to 350 degrees. Mix all the ingredients in a medium bowl. Pour the filling into the pie shell. Place in the oven.
- Bake for 1 hour. Optionally cover pie edges with foil to prevent overbrowning.
- Let cool completely and slice.
