Make this recipe for a perfect christmas morning! Eggnog pancakes comes out so tall and fluffy and so full of spices and winter flavor.

Ingredients for this recipe are almost the same as the traditional fluffy pancakes, just instead of milk or buttermilk i put eggnog. Then i just adjusted the amount of flour in the batter so its not too thick or too runny. 

  • eggs
  • eggnog, your favorite brand
  • all purpose flour
  • baking soda and baking powder
  • pinch of salt

If you are making it for a christmas morning breakfast, i also recommend to have a cup of freshly brewed coffee or earl grey tea. So good together!

Also this pancakes may be your make ahead Christmas breakfast idea, just make them the night before and reheat later in the morning in the toaster. Life gets busy and we dont always have enough time to make proper breakfast.  

How to make eggnog pancakes step by step

Step 1. Grab a medium size bowl and crack an egg into it. Whisk it until nice and fluffy.

Step 2. Add eggnog to the mixture. I usually add 1 cup of eggnog and then look if i need to add more to thin the batter out when i add al the flour. Eggnog varies in texture

Step 3. Add flour, baking soda, pinch of salt and baking powder into the batter. Mix well. Add more eggnog if you feel like the batter is too thick.

After the last step, just cook your pancakes like you would do with regular pancakes. Scoop about a 1-2 tablespoon amount of batter into the buttered heated griddle forming a round shape for pancakes. When the dough becomes bubbly (about 1 minute) , flip it and cook for another 30 seconds.

You can serve this pancakes with slices of crispy bacon! Or even add some hashbrowns for a more filling meal. Also dont forget to top your pancakes with maple syrup or whipped cream! If you find your eggnog pancakes already on a sweet side, use whipped greek yogurt instead of whipped cream. It will add a great balance to the sweet dough.

Ingredients

  • 1 egg
  • 1 1/2 cup eggnog
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup all purpose flour
  • pinch of salt

Instructions

  • Mix all the ingredients in the order listed in the ingredient list.
  • Preheat nicely buttered pan or griddle. Scoop couple tablespoons to form medium size pancakes. Cook on the medium heat for about 1 minute, until bubbles will start forming on the surface of the pancake. Flip it using a spatula and cook on the other side for about 30 seconds.
  • Stack eggnog pancakes and top them with berries, maple syrup or Greek yogurt to balance the sweetness.
