Shad roe scrambled eggs

Ingredients

  • 2 eggs
  • 1 teaspoon milk
  • 1 sac of shad roe
  • 1 teaspoon butter
  • 1/2 lemon
  • salt and pepper
  • green onions chopped

Instructions

  • Scrape shad roe into the bowl.
  • Mix eggs, salt, pepper and milk in a different bowl. Add roe and mix again.
  • Melt butter in a medium size skillet. Cook the mixture just like you would be cooking scrambled eggs.
  • Add some lemon juice to finished dish and serve with chopped green onions on top.

Notes

Carefully remove roe from the sac. It's very delicate and soft.
Thinly slice green onions for extra crunch.
This recipe is great with some hot sauce. Or add chopped jalapenos if you like a spice kick.
