Instant pot cabbage soup with ground turkey
Delicious dump and start instant pot cabbage soup with ground turkey is so easy to make. It tastes just like cabbage roll but in the soup form!
Servings: 6 servings
- 1 lb ground turkey
- 1 teaspoon olive oil
- 1 onion chopped
- 1 can crushed tomatoes 28 oz can
- 1 carrot peeled and grated
- 1 small cabbage shredded
- 4 cups chicken broth
- 1/2 cup rice
- 1 teaspoon salt
- 1 tablespoon garlic powder
- 1 bay leaf
- 1 tablespoon dried parsley
Heat oil in instant pot using SAUTE button. Add chopped onion and cook until fragrant, couple minutes. Add ground turkey and cook until no longer pink.
Add all the remaining ingredients, stir and close and lock the lid. Set MANUAL to 10 minutes. Quick release the pressure.
Open the lid carefully. Stir and add sour cream or heavy cream to taste. Garnish with avocado and chopped cilantro.
If you prefer more firm rice and veggies, cook for 6 or 7 minutes instead of 10 minutes.
