Add oil to the pot. Turn on SAUTE mode. once hot, add oxtail and brown on both sides, about 5 minutes ( make sure they are completely dry before adding to prevent oil splashing!)
Add chopped onion, water and spices and close and lock the lid. Set the pressure cooker to 1 hour Manual setting High pressure. Once cooked, let release naturally for 10-15 minutes.
Serve oxtails with your favorite side dish, pasta, potatoes or rice!
Notes
Feel free to add your favorite vegetables to the pot before sealing. They will get mushy but will add extra flavor to the dish.Browning oxtails is not required but recommended to seal in moisture.
