Ingredients

  • 1 1/4 cup flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice mix
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • 2 tablespoon vegetable oil

Instructions

  • Mix egg, pumpkin, milk and oil in a medium bowl. Add the rest of the ingredients. Stir to combine.
  • Heat a large frying pan. Melt some butter and scoop about 1/3 of a cup into the pan for each pancake. Cook for about a minute on each side or until you will start seeing little bubbles forming.
  • Stack cooked pancakes and top with butter or maple syrup
