Instant pot collard greens with bacon

Southern favorite and so comforting, this Instant pot collard greens will be an amazing side dish for any family gatherings. Added bacon brings so much meaty flavor to the dish that makes this pressure cooker dish great and for the holidays and as an weekday meal.

Equipment

  • Pressure cooker

Ingredients

  • 2 lb collard greens chopped*
  • 4 cups water
  • 3 slices bacon
  • 1/2 onion
  • 2 cloves garlic
  • 2 cups broth
  • salt and pepper to taste
  • 1 teaspoon oil

Instructions

  • In to the pressure cooker add prepared collard greens, water and about 1 teaspoon of salt. Close and lock the lid. Cook on MANUAL for 10 minutes. Quick release once done.
  • Drain the greens and set aside. Meanwhile add bacon and oil in to the empty pot and cook on SAUTE until bacon done and crispy, about 5 minutes. Move slices to the paper towel.
  • Chop onion and add to the pot, Add garlic and cook on SAUTE for a few minutes until soft and fragrant. Add greens and broth and cook for about 10 minutes, until all the flavors are well combined.
  • Meanwhile crumble the bacon. Once the greens are done, serve them on the plate with crumbled bacon on top
