Easy and quick Irish traditional Colcannon recipe that is creamy and so delicious! You will love the mix of potatoes and cabbage in this dish any time of the year, especially on st.Patrick's day!
Peel and cut potatoes in thirds. Place them in the pot and fill with water, until covered. Bring to boil and simmer over medium heat for about 15 minutes, until soft.
Meanwhile add half of the butter to the medium size pot. Shred cabbage and add to the pot. Cook on medium until soft, about 5 minutes. Add green onions and cook for another minute.
When potatoes are done, drain the water and add potatoes to the pot with cabbage. Using a masher, mash vegetables as much as you prefer. You can leave chunks of potatoes or mash it really well, like i did. Add cream and more butter along the way to keep colcannon fluffy and creamy. Add alt to taste.
Notes
Cabbage can be substituted to other greens like kale, collard greens or spinach.If you dont feel like using two pots, you can make this recipe in the potato pot. Just drain potato water and set potatoes aside (cover with something to keep warm). Add other ingredients in the same pot until done and then add potatoes and mash them! Easy and less dishes to clean
