- 1 lb ground beef
- 2 celery ribs
- 1/2 onion chopped
- 2 carrots peeled and chopped
- 1 can diced tomatoes
- 2 teaspoon beef bouillon
- 1 cup barley rinsed
- 2 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon olive oil
- 8 cups water
- 3 medium potatoes peeled and cubed
Push instant pot SAUTE button. Heat oil and add chopped onions. Cook onions for 5 minutes, stiring. Add ground beef and cook for another 3-5 minutes until browned.
Add the rest of ingredients and stir. Close and lock the lid. Pressure cook for 20 minutes. Quick release the pressure once cooked.
If you are using classic beef bouillon powder, no extra salt needed in the soup.
Make sure to rinse barley very well.
