Boxty Irish pancakes
Easy Irish pancakes called boxty made out mashed and raw grated potatoes. With just a handful of ingredients you will get delicious filling breakfast in under 30 minutes. What a great way to use leftover mashed potatoes!

- 1 cup mashed potatoes
- 1 cup grated raw potatoes
- 1 cup buttermilk
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon butter
Mix all the ingredients together*. Heat butter in the pan over medium heat.
Scoop dough into the pan forming pancakes. Switch heat to low and cook for about 10 minutes on each side. Meanwhile you start with another small pan and make one big pancake in it following same directions
Once cooked, move to the plate. Enjoy with sour cream and green chopped onions. Or as is!
*Use your favorite mashed potatoes recipe
*Grate potatoes on the regular grater and once done, squeeze all the liquid out of it, by hand before mixing in to the dough
