Ingredients

  • 2 Medium size tomatoes
  • 1/2 Yellow onion
  • 1 English cucumber
  • 1 Bell pepper
  • 1 Large avocado
  • 3 oz queso fresco cheese or use as much as you want

For dressing

  • 2 Tbsp Olive oil
  • 1 Tspn Balsamic vinegar
  • Juice of half a lemon

Instructions

  • Thinly slice bell peppers . Cut tomatoes in small pieces. Peel cucumbers if needed and cut in half lengthwise and then slice thinly. Slice onion.
  • Cut avocado and cheese in cubes
  • Whisk all the dressing ingredients in a small bowl, add salt and pepper to taste .
  • Place all the ingredients in to a medium bowl , mix well with the dressing
