Boxty Irish potato pancakes

Easy Irish pancakes called boxty made out mashed and raw grated potatoes. With just a handful of ingredients you will get delicious filling breakfast in under 30 minutes. What a great way to use leftover mashed potatoes!

This recipe will be perfect to start your st.Patricks day on the right note. But i end up making this recipe a lot just on a regular day.

My kids love is, they love the taste of fried potatoes in many recipes. I am originally from Russia and we have a similar food called “draniki”. Almost the same recipe, but without mashed potatoes.

So Irish pancakes use mashed potatoes with grated raw potato in equal proportions. That adds some very unique texture to the cake and make them even more delicious.

To make sure your pancakes are not raw and cooked through, cook them on the low heat for about 10 minutes on each side. Raw potato takes some time to cook, that why we the low heat on the skillet is essential. If you will turn the heat to high you might burn pancakes.

Toppings for Irish pancakes

I like to use sour cream to top boxsties and as a dip. Since this pancakes are savory, try to add chopped green onions chopped bacon as well. My kids still like strawberry jam on everything so they topped it with jam. Basically, anything works!

Ingredients

  • 1 cup mashed potatoes
  • 1 cup grated raw potatoes
  • 1 cup buttermilk
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon butter

Instructions

  • Mix all the ingredients together*. Heat butter in the pan over medium heat.
  • Scoop dough into the pan forming pancakes. Switch heat to low and cook for about 10 minutes on each side. Meanwhile you start with another small pan and make one big pancake in it following same directions
  • Once cooked, move to the plate. Enjoy with sour cream and green chopped onions. Or as is!

Notes

*Use your favorite mashed potatoes recipe
*Grate potatoes on the regular grater and once done, squeeze all the liquid out of it, by hand before mixing in to the dough
